?Bep Al·lès/Ciutadella - These days, as Menorca celebrates the Partridge Fair and the Partridge Gastronomic Weeks, the island once again turns its gaze toward the countryside, toward one of its deepest roots. Partridge is not just an ingredient: it is the undisputed queen of small-game bird hunting in Menorca and a symbol of a way of understanding nature, cooking, and the passing of time.
Among all its preparations, partridge with cabbage stands out as an emblematic dish of Minorcan game cuisine. It is a winter recipe, slow-cooked with patience, where the cabbage absorbs the intense flavor of the meat and spices, resulting in a hearty dish full of memory. In many homes it is still considered a special-occasion meal, one that brings the family together around the table.
The tradition of partridge hunting on the island dates back centuries. It has been hunted with shotguns and pointing dogs, but also with snares and decoys, an ancient practice that requires knowledge, silence, and great skill. Menorca has always been a land of good hunters, respectful of nature and the rhythms of the countryside.
The author of these lines can still remember visiting his great-aunt Paulina’s house in the 1970s. Under the porch, her husband, Uncle Toni Torrenova, kept cages with male partridges, caring for them with almost artisanal dedication, already thinking of future successful hunts.
Besides cabbage, partridge has traditionally been cooked with rice, mushrooms, or in sauce. And in noble households in the past, exquisite partridge pies were even prepared. Today, these fairs and gastronomic events offer a wonderful opportunity to reclaim this heritage and once again savor a piece of the most authentic Menorca.
