Tritón's sea urchin croquettes

The El Tritón bar in the port of Ciutadella is the temple of seafood tapas with a long tradition of good food in its history as a fishermen's tavern first, and as a tapas bar and seafood cuisine today.

One of the new features that surprised us this month of June has been their sea urchin croquettes (that's what we call sea urchins in Ciutadella), which are an explosion of sea flavors, but with the refinement of good cuisine, in addition to being crispy on the outside and very mellow on the inside, they make it a signature dish of El Tritón, as are their squid meatballs.
