There are good croquettes, very good croquettes… and then there are croquettes that tell a story. The “La Chon” stew croquette served at Pez Limón, in Ciutadella, is one of those gems that goes far beyond the perfect bite. It is a sincere and emotional tribute to the chef’s Basque grandmother, something you can feel from the first crunch to the creamy finish.
Golden and delicately crisp on the outside, the inside reveals a smooth, deep and comforting filling, with the unmistakable flavour of a stew made with time, patience and memory. A croquette that needs no gimmicks, as it speaks clearly through product and balance. Finished with a soft touch of cream, each bite is rounded, elegant and absolutely addictive. We loved tasting it, and that’s no exaggeration: it’s the kind of dish that makes everyone fall silent at the table.
This croquette is also a statement of intent from the personal project of Elena Angosto and Héctor Gallego, the chefs behind Pez Limón. Located in the heart of Ciutadella’s old town, the restaurant champions creative, Mediterranean, author-driven cuisine, in a relaxed yet carefully curated atmosphere, where Menorca’s local products and a well-chosen wine list take centre stage.
At the moment, Pez Limón is enjoying a well-deserved break: they will reopen soon after a couple of months’ holiday, with renewed energy and, we hope, with this must-try croquette ready to delight us once again.
