Poor Man’s Lobster Salad: The Fishermen’s Dish That Fed Ciutadella

Bep Al·lès/Ciutadella - Today, lobster is one of Menorca’s great gastronomic symbols and a luxury product sought after by restaurants and lovers of fine food. However, it was not always so. There was a time when the fishermen of Ciutadella considered it an everyday food and prepared it in a humble, refreshing dish known as Poor Man’s Salad (Ensalada de Pobre).

“In those days, fishing was a financially modest profession, and both fish and lobster were far less valued than they are today,” recalls Biel Cardona. Catches were plentiful, and lobster was a common part of the diet of the families of Baixamar during the summer months.

The recipe, which today forms part of Menorca’s culinary heritage, has survived through the generations thanks to collective memory. It even found its way onto the menu of official events. Cardona recalls a conversation with Bep Al·lès, who remembered that during Queen Sofía’s official visit to Ciutadella for the inauguration of the renovated Teatre des Born, one of the dishes served at the dinner held at Cas Quintu was precisely this traditional Poor Man’s Salad, also known as Lobster Salad.
