Itziar Lecea/Alaior - In Menorca, where agricultural tradition coexists with protected landscapes and growing tourism, there are estates that keep traditional practices alive while combining them with innovative projects. Llucasaldent is one such example. Owned by the Pallicer family, the estate has consolidated over the past twelve years an olive oil production that blends local and foreign varieties, using a fully artisanal process, becoming a meeting point between agriculture and agritourism.
The initiative began as a modest yet ambitious family project. According to German Muñoz Palacios, the estate’s general manager, the aim was to make the most of the land and develop an agricultural activity that would complement rural life and their commitment to agritourism.
“When we arrived and launched the agritourism project, we needed an agricultural activity, so we continued with olive oil production, carrying out the entire process ourselves,” explains Muñoz.
At Llucasaldent, olive oil production is not limited to a single variety. Arbequina predominates, known for its smoothness and fruity aroma, but there are also picual, hojiblanca, empeltre and Menorcan wild olive (ullastre). These varieties are combined to create a balanced blend that reflects the island’s diversity and takes advantage of the characteristics of each type of olive tree.
“We make a blend with all these varieties. Each year is different, as production depends on weather conditions, but we always try to maintain balance and the quality of the final product,” says Muñoz.
The estate currently has 1,200 olive trees, and around 400 more have recently been planted, still young, with the aim of increasing production in the coming years. Management is manual and meticulous: the main task is not only harvesting, but the constant maintenance of each tree, ensuring it remains in the best possible condition throughout the year.
Llucasaldent olive oil is produced entirely on the estate, thanks to its own mill and the supervision of a professional who oversees quality throughout the process, from harvesting to bottling. This careful control ensures that the oil retains its properties and distinctive flavor.
The oil is mainly used in the estate’s restaurant, where guests can taste a local, fresh and artisanal product. At the same time, it is sold through Sa Cooperativa del Camp, local shops and several restaurants in Menorca. This year, Llucasaldent has begun collaborating with a local distributor, facilitating access to new retail outlets and opening the door to a broader market.
Although family-run and artisanal, production is not limited to olive oil. The estate also has a small grape production, which is sold to a nearby estate for winemaking. This complementary activity strengthens their connection to the land and the sustainable agritourism model promoted by the Pallicer family.
The story of Llucasaldent shows how a family estate can combine tradition, quality and innovation. The project began twelve years ago and has gradually improved its production process, always respecting nature and the specific characteristics of each tree.
The estate’s philosophy emphasizes manual work and the care devoted to each olive tree. “Harvests are small, but the real work lies in maintaining the tree throughout the year — being there day by day to keep it in the best possible condition,” explains Muñoz. This constant attention ensures consistent quality and a distinctive identity.
Llucasaldent is not only an olive oil-producing estate; it is also a life project that combines agriculture, sustainability and tourism. With new plantings and expanded commercialization, the Pallicer family aims to ensure that Menorcan olive oil continues to be a product with a future and recognition, with a quality and character that reflect the land where it is born.
“It’s a product that always finds a market,” concludes Muñoz, highlighting that the combination of tradition, environmental respect and innovation in production is the key to Llucasaldent’s future.
