Es Replec's Soria-style Torreznos

Soria-style torreznos are one of the new additions to Es Replec's menu this season, and they look set to become a permanent favourite. Prepared according to the traditional recipe, they feature an exceptionally crispy rind and tender, slow-cooked pork belly that melts in the mouth.

They are served with patatas revolconas, the classic mashed potato dish from Castile and León flavoured with smoked paprika and fried garlic, together with fried Padrón peppers that add freshness and balance.

At Foodies on Menorca we particularly appreciate this dish because it shows that, while remaining faithful to its charcoal-grilled identity, Es Replec continues to enrich its menu with carefully crafted new dishes.
