Cas Cònsol’s Vitello Tonnato

During our latest visit to Cas Cònsol, we had the opportunity to taste one of the dishes featured on their daily menu: an elegant and flavorful vitello tonnato that stands out both for its preparation and its refined presentation.

The dish is based on very thinly sliced veal, cooked just right to preserve its tenderness and characteristic pink color. It is delicately arranged on the plate, creating a uniform surface that invites you to enjoy it. On top, a creamy and well-balanced tonnata sauce is spread, made with tuna, anchovies, and mayonnaise, providing an intense yet harmonious contrast.

Presentation is one of its strong points: the sauce is arranged in a filigree pattern, adding visual dynamism, while a touch of chopped chives and some fresh sprouts in the center bring color and freshness. A light drizzle of olive oil completes the dish.
