Binitord, a 100% Menorcan winery

The idea was born from the passion that two couples of friends from Ciutadella – Joan and Bernadette, and Toni and Sisca – had for the world of wine. That’s how they started making their first wines, as a hobby, with no intention of turning it into the renowned winery it is today. Over the years, however, they grew and became more professional, entering the market in 2007. Today, the winery is run by Clara Salord, daughter of Toni and Sisca.

“When they started making wine, there were few wineries and few vineyards,” Clara recalls. “I’m sure Binifadet was already up and running, Sa Forana I think also appeared around the same time, as well as Sa Marjaleta, Rubí de Mediterrani, Sant Patrici and Ferrer de Muntpalau, which was the first.” This timeline makes Binitord one of the wineries with the longest trajectory of the last twenty-five years. But how do you manage to turn a pastime into a winery with international awards and recognition? “With a lot of work and a strong desire for it to turn out well, the perseverance that has gone into it and that has generated recognition – which in turn pushes you to keep doing things better. We’re improving little by little, because this is a business where you have to invest time and money that they didn’t have at the beginning, so we’ve grown gradually, making improvements that years ago seemed unthinkable, acquiring increasingly better and more professional equipment. This evolution has led to these awards and distinctions. I think every year we climb one step higher.”

The first award-winning wine was a red, at the Tellus competition, where they received a gold medal. More recently, they have entered some of their wines every year in Catavinum, where they have also earned gold and silver medals, and even, in 2024, a grand gold. “These distinctions are very satisfying because you can see that the effort and the work have a purpose; they show us that we’re on the right track. It’s not the same as hearing it from people who already come to the winery or know us in Menorca, as having a panel at a blind tasting – who don’t know us personally – recognise the quality of the wines we make at Binitord.” Clara also points out that, on the island, people really appreciate the fact that they are local families, that the product is made by people from the land and the business is run by Menorcans. “People really value that we do everything ourselves; I think they feel the Binitord winery as something of their own, so they appreciate us at home for the affection they have for something that is truly Menorcan.”

At the moment, Binitord has 9.5 hectares under vine, with both white and red varieties, including: Chardonnay, Malvasia, Muscat, Prensal Blanc and Macabeo, and Cabernet Sauvignon, Syrah, Merlot, Tempranillo (Ull de llebre) and Monastrell. With all these varieties, in 2025 they will continue to back their usual collection, which includes a white, a rosé, two reds and vermouth.

“We don’t have any product novelties for this year, but we are planning to include Garnacha, which has recently been added to the specifications of the Protected Geographical Indication, so we will probably plant it. Besides that, we’re innovating with systems for maintaining and managing the soil, such as a wool mulch that helps us retain moisture in the ground. We are always testing new things, in order to find sustainable methods that help us improve the harvest.”
