Al Parico, Alma y Arte – a wine with soul, made into art

By Miriam Triay/Photos Al Parico, Alma y Arte - Born from a dream, and from a deep love for the island and its people, the Al Parico project has been up and running since 2017, and a year later the first planting took place. “The search for an estate out of time, unique for its location, its history, its team and, above all, for its soul, gave life to this dream that lives up to that encounter,” they explain from the winery.

This is an initiative that aims to preserve the essence of the place, its magic, updating itself without turning its back on tradition, seeking a return to the natural. In the words of the owners: “From the beginning, our dream has taken shape around a singular project: vines from massal selections or from plots with multiple carefully selected clones, bush-trained vines, faithful to ancestral gestures, dry-farmed, a perennial cultivation that respects the environment. Very soon, obtaining the organic certification will consolidate this deep commitment to sustainable viticulture.”

In fact, it is a mixed farm (olive trees, cereals and vines) and a livestock farm (sheep and horses), where they have adopted a holistic approach to agricultural activity: “We let the sheep graze in certain vineyard plots during the winter, we sow green manures between the vines, which benefits the soil and allows the bees to pollinate their flowers, we use the dried flowers of chamomile grown at Al Parico to make infusions that we apply to the vines during the summer. These are just a few examples, and in the future we will continue to develop these interactions.”

Thus, the owners aim to keep moving forward, with a clear commitment to the environment and sustainable viticulture, as they themselves acknowledge. But at all times, without neglecting the origins of this craft and the traditions surrounding it, trying to reach a common ground between progress and what is ancestral.

In this respect, next year, 2026, as they have told us, the idea is to open their winery, already under construction, designed to blend into the Menorcan landscape like a naveta, following the idea of being “in perfect symbiosis with the nature and history of Menorca”.

Right now, the estate has 13.8 hectares of its own vineyard in production — within a total property of more than 300 ha — where different grape varieties are grown: chardonnay, malvasia (white), syrah, grenache, monastrell, cabernet sauvignon (red). All of them are authorised under the PGI “Illa de Menorca”. Their goal is to produce red, white and rosé wines that embody the essence of Al Parico. As they themselves define them: “refined, elegant wines with a strong identity.”

After seven years of project work, effort and study, and of analysing land that, as they say, had “remained silent for decades”, this year they have presented their first wine, Murmullo. “A white wine, 100% chardonnay, the result of meticulous work. After a manual harvest, the grapes were pressed in whole bunches and vinified in stainless steel tanks. Afterwards, half of the wine was aged in French oak barrels for six months, while the other half remained in stainless steel, which helped preserve the fresh fruit aromas,” they explain from Al Parico. The result is this wine, Murmullo, with a balance of delicate and mineral aromas, a bright acidity and a persistent texture that reflects its barrel ageing.
