Bep Al·lès/Ciutadella – The Varias Genuí Brut Nature, recommended this week by Vinum Menorca, is a cava that authentically reflects the essence of Sant Sadurní d’Anoia, the birthplace of cava, and the artisanal philosophy of Berral & Miró, a house that works with rigor and respect for tradition. This is an aged cava, made from the classic Penedès varieties — Macabeu, Xarel·lo and Parellada — offering a pure, sincere and balanced expression, true to its name: Genuí.
Its Brut Nature style, with no added sugar after disgorgement, highlights the natural freshness and the truth of the base wine, without any cosmetic touch. It is a cava designed to convey transparency, character and Mediterranean elegance.
Appearance
Pale straw yellow in color with soft golden highlights, it displays a very fine, abundant and persistent stream of bubbles, forming a delicate and continuous bead. Clear and bright in appearance, it reflects careful aging and precise winemaking.
Nose
The nose opens with notes of fresh white fruit (apple, pear, peach) and ripe citrus, over a background of white flowers and fresh almond. As it aerates, subtle hints of toasted bread, yeast and dried nuts emerge, the result of time spent aging on the lees. The overall impression is clean, harmonious and highly expressive, with a frank and elegant profile typical of well-crafted cavas from Sant Sadurní.
Palate
On the palate it is dry, refined and refreshing, with lively yet balanced acidity that provides length and tension. The bubbles are soft and well integrated, giving a creamy and persistent texture. It has a straightforward and sincere mouthfeel, with a slightly mineral and citrus finish that invites another sip. This is a pure and direct cava, without artifices, speaking clearly of the grape and the passage of time.
Serving temperature
Serve between 6 and 8 °C (43–46 °F), in a tulip-shaped glass to fully appreciate its aromatic elegance and the finesse of its bubbles.
Philosophy and essence
The name Genuí is no coincidence: it defines an authentic, honest cava deeply rooted in its land. In Sant Sadurní d’Anoia, producers such as Berral & Miró keep alive the tradition of second fermentation in bottle, the patience of aging and respect for the classic Penedès varieties. Each bottle is a testament to craftsmanship and to a love for cava as a cultural and gastronomic heritage.
This Varias Genuí Brut Nature is therefore a tribute to elegant simplicity and the value of time — without artifices, with the honesty of a job well done.
Food pairing
Oven-baked white fish with potatoes, tomato and onion, such as red sea bream or dentex, as well as ray, comber or pandora bream, where the cava enhances freshness and cleanses the palate. Also delicious with grilled John Dory.
Oven-baked squid with sweet potato, cuttlefish in sauce, or baked moray eel or conger eel, which find harmony with its creamy texture and precise acidity.
Endive and cod fritters, red prawn croquettes, fried calamari, gratinated mussels, or boiled sea snails with mahonnaise — ideal for an aperitif or a light lunch.
Chicken with prawns or langoustines, suckling pig stuffed with grouper, rabbit with lobster, red mullet with wild mushrooms. Classic “sea and mountain” pairings that the bubbles make more vibrant and balanced.
Varias Genuí Brut Nature is an authentic and essential cava that captures the spirit of Sant Sadurní cavas: freshness, purity and natural elegance. Without makeup or artifice, it showcases the finest profile of the Catalan cava tradition. With its frank and persistent character, it is a cava to share, to celebrate and to remind us that true quality is often found in simplicity.
