Scientifically known as Loligo vulgaris, and although it is not a fish as the title of this section suggests, squid forms part of the Christmas and New Year cuisine on our island. Squid belongs to the cephalopod family and is commonly caught here using fluixa fishing at sunset. It is also caught by trawling boats (barques de bou).
The most highly prized squid are those measuring between 30 and 50 cm, although they are becoming increasingly difficult to catch. In addition to being prepared stuffed and baked —the way Menorcans traditionally eat them at this time of year— squid offers many culinary possibilities. Besides the classic battered squid rings, it is also enjoyed grilled with garlic and parsley, a la bruta —uncleaned and grilled, which is how freshly caught squid is most appreciated by the people of Baixamar—, in sauces, and as an ingredient in stews and rice dishes.
