One of Spain's most popular culinary recipes, Russian salad, has received a new award for excellence. Tragatá, located in the Andalusian city of Ronda, in Málaga province, has won the title of Spain's best Russian salad at the 9th National Russian Salad Championship, held on 6 October 2026 as part of the prestigious San Sebastián Gastronomika congress.

This year's award has particular significance because the competition brought together the eight winners of previous editions to determine which was the best of the best. Tragatá's creation, prepared by chef Daniel Moreno Zarzavilla, defeated the other finalists and earned the champion of champions title. This is not the first time the recipe has triumphed, as the same establishment won the competition in 2021.

Behind Tragatá is renowned chef Benito Gómez, who also runs Bardal, a restaurant awarded two Michelin stars. At Tragatá, Gómez offers a more informal dining concept based on tapas and sharing dishes, paying particular attention to ingredient quality and the revival of traditional flavours.

The secret behind an extraordinary Russian salad

The winning recipe is based on a seemingly simple preparation, executed with extraordinary precision. Its ingredients include hand-broken potatoes, tuna belly, egg, grated carrot and blanched green beans, all combined with a creamy mayonnaise enhanced with a touch of olive oil.

One of its distinctive elements is the pickled piparra peppers, which provide subtle acidity and balance the richness of the dish. The combination of textures and flavours creates a delicate, delicious Russian salad that remains faithful to the traditional recipe.

The popularity of this speciality was already considerable following its first award in 2021, when it became one of the restaurant's most requested dishes. The new recognition further strengthens its gastronomic reputation and establishes Tragatá as an attractive destination for lovers of excellent tapas.

For travelling foodies, the good news is that this Russian salad is not available exclusively in Ronda. Tragatá also has a restaurant in the city of Málaga, on Alameda Principal, where it serves its selection of tapas and specialities.
