Bep Al·lès/Ciutadella - This week, Vinum Menorca’s recommendation takes us to the Aragonese Pre-Pyrenees to discover Sommos Colección Sauvignon Blanc 2022, a white wine from the Somontano PDO, produced by Bodega Sommos in Barbastro. A wine that reflects the potential of one of Spain’s most dynamic wine-growing regions, with altitude as one of its greatest allies.
This Sauvignon Blanc is made exclusively from grapes grown at Finca Güell, a vineyard located at close to 1,000 metres above sea level, a feature that decisively shapes the wine’s personality. The significant differences in temperature between day and night encourage the grapes to ripen slowly, preserving their natural freshness while enhancing their aromatic intensity.
Bodega Sommos has made innovation and the pursuit of the highest quality the cornerstones of its project. With this collection, the winery showcases its finest vineyards and the potential of each grape variety, producing wines of great precision, elegance and identity.
In the glass, it displays a pale yellow colour with greenish highlights, bright and crystal-clear.
On the nose, it reveals all the typical character of Sauvignon Blanc, with intense aromas of tropical fruit, passion fruit, pineapple and mango, accompanied by citrus notes of grapefruit and lime, together with delicate hints of fresh grass and aromatic herbs that add considerable complexity.
On the palate, it is fresh, lively and very well balanced, with vibrant acidity that provides tension and a pleasant sense of verticality. The texture is silky, with excellent fruit intensity and an elegant minerality that extends through to a persistent, clean and highly refreshing finish.
Its aromatic intensity and freshness make it an excellent companion for delicate dishes full of nuance. It pairs particularly well with:
Oysters, grilled cockles and natural shellfish. Also steamed shellfish such as mussels and local escopinyes de gallet.
Ceviche of meagre, sea bass, sea bream or scallops.
Bluefin tuna or salmon tartare, as well as tiraditos made with these fish.
Menorcan-style baked white fish or grilled white fish with fresh herbs and Menorcan extra virgin olive oil.
Rice dishes and seafood stews in which shellfish takes centre stage.
Japanese cuisine, especially sashimi, nigiri and shellfish tempura.
Served between 7 and 9 °C, it fully reveals its aromatic expression, freshness and the elegance imparted by high-altitude viticulture.
