Sa Tanqueta de Randa, winner of the 1st Mallorca PGI Sobrassada Cooking Competition

The 1st Mallorca PGI Sobrassada Cooking Competition now has a winner: Sa Tanqueta de Randa, whose proposal — Black Pig Rib, patató potatoes and sobrassada in textures — was chosen as the winning dish.

The final took place at midday at Sa Feixina, within the framework of the Balearic Islands Gastronomy Fair, featuring the four finalists: Sa Tanqueta de Randa with Black Pig Rib, patató potatoes and sobrassada in textures; Übeck with the Porc Negre tapa; Arume Sake Bar with Squid and sobrassada textures; and Bellaombra, which delighted the jury with Cuttlefish lacquered with Mallorca PGI Sobrassada and red vermouth, Sa Pobla patató potatoes, and crispy Mallorcan “sopes” bread with sobrassada.

This year’s jury was composed of José Cortés, jury president and chef awarded the Palma City Gastronomy Prize in January 2026; Antònia Maria Torres, director of the Mallorca Sobrassada Tasting Jury; Isabel Pedrosa, member of the Mallorca Sobrassada Tasting Panel; and Alfonso Robledo, president of the Balearic Islands Restaurant Business Federation (FERIB). The panel brought together gastronomic expertise and the technical-sensory criteria of the PGI-protected product.

After a closely contested final, in which each participant cooked their dish live on stage, the jury declared Sa Tanqueta de Randa the champion of the 1st Mallorca PGI Sobrassada Cooking Competition, awarding a €600 prize.
