Foodies on Menorca
Lomo saltado is one of the defining dishes of Peruvian criollo cuisine and a particularly eloquent expression of the cultural fusion that has shaped the country’s gastronomy. At Kaypa Origen Perú, located within Suites del Lago 5* in Cala en Bosch and part of Grupo Moga, Peruvian chef Omar Malpartida approaches this classic through respect for its roots, contemporary technique and a dialogue with Menorcan produce.
The dish is built around cubes of beef loin quickly stir-fried at intense heat, reflecting the Chinese —or chifa— influence on Peruvian cuisine. The beef remains succulent inside and is accompanied by red onion, tomato and a dark, glossy, intensely flavoured sauce combining the meat juices with the seasonings from the wok. Golden, crisp potatoes mingle with the sauce and absorb some of its flavours, while the vegetables provide freshness, acidity and contrasting textures.
Rich and intense, with beef, sauce, potatoes, tomato and onion at its core, this is an excellent introduction to Peruvian cooking beyond ceviches and tiraditos. Malpartida preserves the dish’s recognisable criollo identity while bringing it into Kaypa’s culinary language, where Peru and Menorca meet on the same plate.
