More than 120 chefs from 26 countries have signed an open letter pledging to remove salmon raised in open-net marine farms from their menus. Signatories include Joan Roca, Ángel León and Eneko Atxa, alongside other internationally renowned chefs. Together, the participants hold more than 90 Michelin stars.
The initiative is part of Off The Table, a campaign promoted by British conservation organisation WildFish, which is calling on the restaurant sector to stop serving this product until the industry changes certain production practices.
The campaign focuses particularly on open-net marine farms and the potential impacts they may have on the marine environment, including waste, parasites, disease and escapes of farmed fish that may affect ecosystems and wild populations.
Through this action, the campaigners aim to reduce demand for farmed salmon and increase pressure on the industry to adopt production systems with a lower environmental impact. The initiative, which has been running since 2022, has gradually attracted restaurants, chefs and organisations from different countries.
