The “xuclador,” at risk of extinction

The xuclador, a soft Vienna-style or milk bread roll generously filled with custard, was for decades the favorite afternoon snack of many boys and girls. Sweet, simple, and made with basic ingredients, it was part of everyday life after school or during local festivities. Today, however, this traditional pastry is clearly in decline.

Globalization and the massive arrival of industrial products from abroad have gradually pushed the xuclador aside on bakery counters. New trends, imported sweets, and standardized production have reduced the presence of this classic of local pastry-making. Nowadays, only a few bakeries still prepare it artisanally, keeping alive a recipe that forms part of the community’s collective memory.

Bringing back the xuclador is not just a matter of taste, but also of preserving a piece of our everyday gastronomic heritage.
