Foodies on Menorca
With the scientific name Xyrichtys novacula, from the wrasse family, it lives on sandy bottoms located between 5 and 35 meters deep. It is particularly active in summer, while in winter it remains buried in the sand.
It organizes itself into groups of varying sizes, composed of a male —which dominates a wide stretch of seabed— and his harem of females. It can weigh between 150 and 220 grams and has a very compressed body —similar to a razor blade— which gives it its name. In addition, it has two small sharp teeth, which it can use easily, delivering very painful bites.
Thanks to the characteristic flavor of its flesh, white and extremely delicate, it is one of the most highly prized species in Menorcan cuisine. It is eaten fried.
