Mistinguett Organic Brut Nature, recommended this week by Vinum Menorca, is a refined, contemporary expression of Mediterranean cava, crafted by Vallformosa, one of the most historic and innovative wineries within the Cava DO. This sparkling wine is a tribute to talent, perseverance and the feminine spirit, inspired by Mistinguett, one of the great stars of 20th-century Parisian music hall.
The result is an organic, cellar-aged cava—fresh and elegant—made from Macabeu, Xarel·lo and Parellada grown sustainably in the Comtats de Barcelona subzone. Its Brut Nature style, with no dosage, highlights its purity and authenticity.
A pale straw-yellow colour with greenish highlights, clean and bright, with a very fine, persistent bead forming a steady stream. Its clarity and visual energy convey youthfulness and precision in winemaking.
The nose is fresh, delicate and enticing. Notes of white fruit (green apple, pear) and ripe citrus stand out, backed by hints of raw almond, white flowers and fine yeasty tones. With aeration, subtle touches of brioche and Mediterranean aromatic herbs appear, speaking of its origin and respect for the land. The bouquet feels natural and balanced, with a clean, elegant profile.
On the palate it is dry, fresh and harmonious, with a lively attack and a creamy texture. The bubbles are fine, persistent and well integrated, bringing energy without harshness. A precise acidity lengthens the finish, which is lightly mineral and citrus-tinged, very refreshing. A cava that combines finesse and expressiveness—ideal for aperitifs as well as festive meals over the coming Christmas and New Year season.
Serve between 6 and 8 °C, in a tulip-shaped glass to enhance aromatic complexity and creaminess.
The name pays tribute to Mistinguett (Jeanne Florentine Bourgeois, 1875–1956), an iconic French cabaret and Parisian music-hall artist, famed for her magnetic personality and pioneering attitude. With her voice, charisma and sensuality, Mistinguett broke social conventions and became a symbol of female empowerment, elegance and creative freedom.
Vallformosa embraces that spirit: Mistinguett Organic Brut Nature is a tribute to all women who work with passion and dedication, reflecting the same brave, refined and authentic character that defined the artist.
Its dry, fine profile makes Mistinguett Organic Brut Nature a versatile companion to Menorcan cooking, enhancing both seafood flavours and traditional dishes built on local produce:
Sopa de la Reina, Christmas broth, boiled dishes and roast cannelloni, where cava adds a joyful lift to classic festive starters.
Stuffed squid, cuttlefish stuffed with monkfish and prawns, cockles or oven-baked mussels, where the bubbles cleanse the palate and highlight the sweetness of shellfish.
Oven-roasted turkey stuffed with cuscussó, or oven-roasted suckling pig (porcella) or Menorcan lamb, where acidity balances the richness of the meat and the sweet-savory stuffing.
Menorcan-style baked fish such as sea bream, dentex or red mullet, or pan-fried John Dory with garlic, or oven-baked lobster gratinéed with aioli—dishes that shine with cava’s bubbles alongside.
Excellent too with Christmas desserts such as cuscussó, rotllos and pastarral, amargos, almond cake (tortada) and nougat, where the cava’s natural vibrancy balances sweetness.
Mistinguett Organic Brut Nature is an honest, fresh, life-filled cava, uniting Vallformosa’s tradition with a modern, nature-respecting vision. Its subtle elegance and vibrant energy make it a true celebration of the Mediterranean spirit and female talent—a cava that toasts life, the land and freedom of spirit in a glass full of light and balance.
