Imperial almond cake

Within the world of Menorcan pastry and confectionery, the almond cake is the queen of cakes and is almost always present at major celebrations, from patron saint festivities to name days. It is the most representative dessert.

The cake, made with almonds, sugar, eggs and sometimes a little honey, is presented in different ways.

When decorated with meringue and candied fruits, like the one in the photograph, it is known as an imperial cake.

It is also served with meringue and egg yolk jam or simply dusted with powdered sugar.
