To prepare the coca dough, place the flour in a large bowl, add the water and olive oil, and mix thoroughly until you obtain a smooth, even dough.
Once the dough is ready, shape it into a ball and roll it out with a rolling pin on a baking tray, giving it the traditional coca shape. The dough should be very thin.
Cut the onion, white peppers, red peppers and garlic into small dice. Place them in a bowl and mix well.
Spread the trampó evenly over the dough. Drizzle with olive oil, season with salt and sprinkle with sweet paprika.
Preheat the oven to 180 °C and bake for about 25 minutes, or until the dough is cooked and lightly golden.
Serve the coca warm or cold, cut into portions.
