At the helm of the kitchen, Borrás champions local produce with a contemporary and elegant vision. His cuisine draws on Mediterranean essence and Menorca’s pantry —market-fresh fish, native meats, cheeses and seasonal vegetables— to create balanced, technically precise dishes full of sensitivity.
