The Cafè Balear is recovering the recipes from its origins as a seafood inn in Baixamar with a modern touch, in the same way that it joins the gastronomic movement of giving a way out to discarded fish, as Ángel León does, in his restaurant Aponiente.
One of these traditional dishes that Josep Caules Arguimbau's grandmother cooked was the pickled gerret (spica maris), which was never missing in a clay pot on the bar of the old Cafè Balear.
Recovering these ancestral recipes, returning to the origins is one of the initiatives that Josep Caules is carrying out and which will surely be a success.
The cuisine of memories, that of gastronomic memory returns and it does so by the hand of one of the great temples of seafood cuisine, not only in Menorca but throughout the Mediterranean.
