Today we were able to taste one of those dishes that become part of our gastronomic memory, those that are not forgotten, and have even been able to seduce those of us who don't like its main ingredient too much, pig's trotters, which Sergi Villalonga, chef of the year in Menorca, served us stuffed with white lobster from Ciutadella, in a memorable tasting menu that paired 9 dishes from Cafè Balear with 9 wines and cavas from the Catalan cellar of Corpinnat, Sabaté i Coca, in a haute cuisine tasting led by Josep Caules Arguimbau.

Pig's trotters stuffed with white lobster from Menorca that we paired with the Sabaté i Coca Corpinnat Reserva Familiar Brut Nature 2014, a cava aged 132 months that was a true gift from Marcel Sabaté i Coca, winemaker and owner of the Catalan winery, who explained each of the nine wines and cavas that a privileged group of us had the honor of tasting.
