Merluzo from Binifadet

This week we recommend a white wine from our island, it is Merluzo Blanc. A young wine made by Bodegas Binifadet in Menorca, combining the Chardonnay, Malvasía, Moscatel and Merlot grape varieties. The harvest is done manually, and fermentation takes place in stainless steel tanks at 17°C, without malolactic fermentation or barrel aging. It is a summery wine, fresh and with the salinity typical of Menorcan wines.

TASTING

View: It has a pale yellow color with golden reflections.
Nose: It offers fresh and fruity aromas, highlighting notes of white fruits such as peach and apricot, along with floral touches that add complexity.
Mouth: In the mouth it is light, fresh and very fruity, with a good persistence that invites you to continue tasting it.

This wine is ideal for informal occasions and is recommended to be paired with appetizers, spicy dishes, seafood rice dishes, shellfish and white fish.

Ideal for combinations with light tapas, such as fresh cheeses, olives and smoked salmon or tuna canapés, as well as calamari a la romana, or cod roe or some breaded sea nettles.

It will perfectly accompany grilled white fish, such as gilthead sea bream or sea bass, or we can even pair it with a Menorcan fish ceviche made with dentex or parsnips as well as a tuna tataki, a salmon tartare or some king prawn tacos.

It goes wonderfully with seafood dishes, such as grilled or tartare red prawns from Ciutadella, which go very well with the freshness and fruitiness of the wine. Also mussels with mayonnaise, grilled razor clams and steamed clams, among other shellfish.

Soupy rice in the earthen pot or in the paella. From the soupy rice with lobster or lobster, to the soupy rice with seafood, without forgetting a red shrimp paella from Ciutadella with cuttlefish, clams and chicken, as well as a blind paella with fish and seafood.
